- 1-2 lbs Yuca, peeled and cut
- 1/2 large red onion, sliced
- 1/3 cup white vinegar
- 1/4 cup lime juice
- 1/4 cup orange juice
- 1 tbsp minced garlic
- 1/4 cup olive oil
- 1/4 cup olive oil
- 1 tsp cumin
- 1/2 tsp oregano
- Kosher salt, to taste
- Ground black pepper, to taste
- Parsley, for garnish
Boil yuca in a large pot of salted water until fork-tender.
Slice onion and combine with vinegar, lime, orange, and garlic to marinate.
Let onions marinate for 20-25 minutes, then drain, reserving some liquid.
Keep boiled yuca in warm water until ready to serve.
Heat olive oil and sauté cumin, oregano, and marinated onions.
Add 1-2 tbsp of marinade liquid to the onions and cook until soft.
Drain the yuca, place in a serving dish, and top with the onion mixture.
Season with salt and pepper, and garnish with parsley.
