Ingredients
  

  • 2 medium sweet potatoes
  • 2 cups water
  • 2 cups raw sugar
  • 1 tablespoon lemon zest
  • 5 grams cinnamon stick
  • 3 or 4 bitter orange leaves
  • A pinch of salt

Instructions
 

  • Peel and thoroughly wash the sweet potatoes.
  • Cut them into dice.
  • Bring the water to a boil in a medium-depth saucepan.
  • Cook the sweet potatoes in a small amount of water until they soften.
  • Cover with sugar, and add the cinnamon and bitter orange leaves.
  • Continue cooking until the sweet potatoes soften and the syrup thickens.
