Ingredients
  

  • 220 g unsalted butter (1 cup)
  • 150 g icing sugar (1 ½ cups)
  • 1 egg
  • Vanilla extract (to taste)
  • 300 g all-purpose flour (2 ½ cups)
  • 10 g cornstarch (1 tbsp)
  • Strawberry jam (as needed)

Instructions
 

  • Cream the butter, icing sugar, and vanilla together until smooth.
  • Beat in the egg.
  • Gradually mix in the flour, baking powder, and cornstarch until combined.
  • Transfer the dough to a pastry bag with an open nozzle.
  • Pipe the dough into cookie shapes on a parchment-lined baking sheet, then top each with a small amount of strawberry jam.
  • Bake at 180°C (350°F) for about 10 minutes or until the bottoms are golden.
  • Allow to cool before serving.
