- 1 kg Fresh Cassava
- 1 cup Coconut Milk
- 2 large eggs
- 1 large egg for topping
- ¼ cup Melted Butter or Margarine
- 1 can (370ml) Evaporated Milk
- 1 can (390g) Condensed Milk ½ cup for topping
- Grated Cheese (optional) for topping
Peel and remove the root part of the fresh cassava. Wash and grate finely, then squeeze out excess juice using a sieve.
Preheat the oven to 175°C (350°F).
In a large bowl, mix grated cassava, 1 cup coconut milk, eggs, evaporated milk, condensed milk, and melted butter until well combined.
Grease the baking pan and pour the mixture in, ensuring it's about 1 inch thick.
Bake for 45-60 minutes at 175°C.
Combine ½ cup coconut milk, ½ cup condensed milk, and 1 egg for the topping. Mix well and set aside.
After 50 minutes of baking, check if the cassava cake is firm. Pour the topping over it and sprinkle with grated cheese.
Bake or broil for 15-20 minutes or 10 minutes, respectively, until the top is light brown and bubbly.
