Ingredients
  

  • 2 1/2 lbs Sweet Potatoes, peeled
  • 1 lb Yellow Yam, peeled
  • 2 small cocos (eddoes)
  • 4 cups coconut milk
  • 1/2 - 1 cup water
  • 2 1/2 tbsps Vanilla
  • 2 - 3 cups Brown Sugar
  • 2 tbsps Lemon juice
  • 1 1/2 - 2 cups All-purpose Flour
  • 1 cup Fine cornmeal
  • 2 tsp Salt
  • 1 1/2 tsp Freshly grated nutmeg
  • 1 1/2 tsp Cinnamon
  • Pinches of Ground cloves and Allspice (optional)
  • 1 1/2 tbsp Melted Butter
  • 1 - 2 cups Raisins (dusted with flour, optional alcohol soaking)
  • 1 ½ cups Coconut milk or whole milk
  • 5 tbsp Dark brown sugar
  • Salt as desired
  • ½ tsp Cinnamon
  • Pinch of Nutmeg
  • 1 tsp Vanilla (optional)

Instructions
 

  • Blend the sweet potatoes, yam, cocos, coconut milk, and water until smooth.
  • Add vanilla, brown sugar, and lemon juice to the blended mixture.
  • Add dry ingredients (flour, cornmeal, salt, nutmeg, cinnamon, cloves, allspice) and melted butter. Mix well.
  • Fold in the raisins.
  • Pour into prepared cake tins.
  • Prepare the soft top by mixing coconut milk, brown sugar, salt, cinnamon, nutmeg, and vanilla. Pour this over the pudding mixture.
  • Bake in a preheated oven. You may place a baking tray with hot water on the shelf below the pudding tins to add moisture during baking.
  • The pudding should be ready in under 2 hours.
