- 2 1/2 lbs Sweet Potatoes, peeled
- 1 lb Yellow Yam, peeled
- 2 small cocos (eddoes)
- 4 cups coconut milk
- 1/2 - 1 cup water
- 2 1/2 tbsps Vanilla
- 2 - 3 cups Brown Sugar
- 2 tbsps Lemon juice
- 1 1/2 - 2 cups All-purpose Flour
- 1 cup Fine cornmeal
- 2 tsp Salt
- 1 1/2 tsp Freshly grated nutmeg
- 1 1/2 tsp Cinnamon
- Pinches of Ground cloves and Allspice (optional)
- 1 1/2 tbsp Melted Butter
- 1 - 2 cups Raisins (dusted with flour, optional alcohol soaking)
- 1 ½ cups Coconut milk or whole milk
- 5 tbsp Dark brown sugar
- Salt as desired
- ½ tsp Cinnamon
- Pinch of Nutmeg
- 1 tsp Vanilla (optional)
Blend the sweet potatoes, yam, cocos, coconut milk, and water until smooth.
Add vanilla, brown sugar, and lemon juice to the blended mixture.
Add dry ingredients (flour, cornmeal, salt, nutmeg, cinnamon, cloves, allspice) and melted butter. Mix well.
Fold in the raisins.
Pour into prepared cake tins.
Prepare the soft top by mixing coconut milk, brown sugar, salt, cinnamon, nutmeg, and vanilla. Pour this over the pudding mixture.
Bake in a preheated oven. You may place a baking tray with hot water on the shelf below the pudding tins to add moisture during baking.
The pudding should be ready in under 2 hours.
